Junior League Roasted Sweet Potato Hummus

Roasted Sweet Potato Hummus -Gorgeous color and innovative ingredients make for a sure-fire hit  

3 cups chopped peeled sweet potatoes

2 1/2 cups chopped onions

1 1/2 cups chopped carrots

1 tablespoon olive oil

1/4 cup tahini

1/4 teaspoon salt

1/8 teaspoon pepper      

Combine the sweet potatoes, onions, carrots and olive oil in a large bowl and mix to coat well.  Spread in a 10x15-inch roasting pan.  Roast at 350 degrees for 1 hour or until the sweet potatoes are tender.     Combine the roasted vegetables with the tahini, salt and pepper in a food processor container and process until smooth.  Serve with breadsticks or crackers.         Tahini, or sesame seed paste, can be found in most well-stocked markets.
